It would be easy to be embittered, but I can only imagine that would just be wasted energy. Instead, I am thankful for the time I had there and the opportunities given to me. I spent most of my culinary career and I grew from a cook to a chef there. I made the best friends I've ever had in my life there. For that I am thankful.
We busted our asses, all of us, the stuff that we have been through together built bonds that I wont soon forget, and while the resort is going in another direction, Lautrec 2007-2010 will never be forgotten (some of us have ink to prove it). And I will be eternally grateful to the team who helped me reach my goals, front and back you all know who you are.

We hope to be able to continue to follow you as you expand your career as a brilliant chef! Thank you again for all you have done for us as well as expanding our culinary palates. ReplyDeleteWe had the pleasure of meeting you over the New Year's holiday (January 2010). As 2010 has been a year of significant change for us personally, we have not returned to Nemacolin since then, but were planning another New Year's weekend and at least one extravagant dinner at Lautrec. Imagine the horror I am experiencing as I have just learned that you are no longer there.
We must know where you have moved on to!!! We had some of our best, most fabulous, and most expensive dining experiences at Lautrec and we love your approach to food. We rave about your creations whenever we get into a serious food conversation. And I'm talking in the same breath as Inn at Little Washington, Alinea, Graffiti, Moto, Minibar, etc. BTW we did go to Alinea for my birthday this year (we live in both DC and Chicago)...I see how Chef Grant is a mentor but let me tell you, you are equally fabulous!
Anyways, you are a culinary genius and we wish you the best of luck and much success. Please do keep us posted as to where you settle next. We will travel for food. :)
